Silken/Chinese Tofu

Ingredients:
  • 1 box Unicurd Silken or Chinese tofu, cut into cubes
  • 1 piece (300g) fish fillet
  • 1/2 Tbsp cooking wine
  • 1 tsp salt
  • 1 tsp ginger, grated
  • 3 stalks spring onion, chopped
  • 1 Tbsp soybean oil
  • 2 cups water
  • 1 Tbsp cornflour, mixed with
  • 3 Tbsps water
  • Few drops of sesame oil
Seasoning:
  • 1 Tbsp light soy sauce
  • 1/2 tsp salt
  • 1/2 tsp sugar
Method:

Season fish with wine and salt. Steam for 5mins. Mash fish. Heat oil in a wok and stir fry ginger and 2/3 of spring onion until fragrant. Add fish and stir fry for a while. Add seasoning, tofu cubes and water. Bring to boil and thicken with cornflour mixture. Sprinkle with sesame oil and spring onion. Serve hot.

Hot Tips:

To add more flavour, use stock instead of water.
