Tofu is a high protein food made from soybeans. It is usually sold as ready to eat cakes that resemble soft white cheese. Asians have been using tofu as meat substitutes for centuries. The typical wet composition of tofu is 85% moisture, 7.8% protein, 4.2% lipid and 2mg/g calcium. The remaining constituents are carbohydrate, and various minerals.

Beancurds may be pressed dried before allowing it to set, resulting in tofu products of different density. These can then be deep fried to become the many well known tofu food products with different textures, taste and appearances.
